A delicious, old fashioned pudding cake with a crunchy top and creamy fruit bottom.


There’s something about home-grown fruits and veggies that make food extra special. We don’t have a garden right now, but we do have a very faithful rhubarb plant. I appreciate every rhubarb dessert my husband bakes, knowing the fruit was grown by us. 🙂
This pudding cake layered with rhubarb on the bottom and a delicious creme brulee topping reminds me of summers gone by. It’s a simple dessert, nothing too, too fancy, but stick-to-your-ribs delicious.

I showed a picture of it on Instagram this week and promised I’d share the recipe on here! I know how much you all absolutely love our Chocolate Rhubarb Brownies and I’m telling you, you’ll love these just as much! Sooo good!

- Old Fashioned Rhubarb Cake
- 2 cups rhubarb, chopped
- 1 1/2 cups sugar, divided
- 3 tbsp. softened butter
- 1 tsp. baking powder
- 1/2 cup milk
- 1/2 tsp. almond extract
- 1/2 tsp. vanilla extract
- 1 cup flour
- 1 tbsp. corn starch
- 2/3 cups boiling water
- Layer rhubarb on the bottom of an 9″ square pan.
- Mix 34/ cup sugar and the remaining ingredients, except for the boiling water and pour over fruit.
- Mix remaining 3/4 sugar and cornstarch and sprinkle over mixture in pan.
- Pour boiling water over everything.
- Bake at 375F for 45 minutes.
- Serves 6-9

We served it warm, topped with vanilla ice cream and everyone was oohing and ahhing.
