Hello Friends! Hope you are all having a great week. With the cold weather we’ve been having, one of the things I enjoy most, is turning the oven on and baking something. These muffins were the first thing that came to mind today. I have tried many different banana muffin and bread recipes the last few years, but I always keep coming back to this one. It’s Mom’s recipe and somehow, it just tastes like home. And I love that. Hope you enjoy it as well.
- 1 cup white sugar
- 1/2 cup butter, softened
- 1 egg
- 1 cup mashed bananas
- 1/2 tsp. vanilla
- 1 1/2 cups flour
- 1 tsp. baking soda
- 1 tbsp. hot water
- chocolate chips; optional
- Preheat oven to 350F.
- Cream sugar, butter and eggs with electric beater until mixed.
- Add banans and vanilla and mix just until blended.
- Dissolve baking soda in hot water.
- Add flour and baking soda mixture and beat just until mixed.
- Bake at 350F for 25minutes or pick inserted in middle comes out clean.
- Freezes well.
