If you’re enjoying all things pumpkin this fall, I would love to share a recipe with you today that you “need” in your life! The best (and super easy to whip up) Pumpkin Muffins I’ve ever had!
When a good friend of ours shared these with us, I had to have the recipe! I love that it makes a big batch because they freeze so well and are perfect for school lunches or anytime-snacking!
Now that fall is here, there is nothing as cozy or homey to me as the smells of baking coming from the kitchen! And these Pumpkin muffins will not disappoint! I shared my Homemade Pumpkin Puree recipe a few weeks ago and itβs so simple to make your own purΓ©e. I used it in this recipe and in many other pumpkin recipes!
- 4 1/2 cups flour
- 3 tsp. baking powder
- 2 tsp. baking soda
- 1 1/2 tsp. salt
- 3 tsp. cinnamon
- 2 1/2 cups oil
- 3 cups white sugar
- 6 eggs
- 3 1/2 cups pumpkin puree
- Preheat oven to 375F.
- Mix dry ingredients together.
- Beat wet ingredients until mixed, using an electric beater.
- Combine wet and dry ingredients using beater.
- Grease muffin tin and bake for 15-18 minutes or until a toothpick inserted in middle comes out clean.
- Cool completely.
- Freeze up to 2 months in an airtight container.
