Hello Friends!
Hope you’re all having a wonderful week! Today, I would love to share with you the most loved cookie in our home. These cookies make an appearance at every birthday party. It’s the cookie that I send to school parties. Christmas cookie trays wouldn’t be complete without it.
It’s. Just. Plain. Delicious.
It may take a little time to whip these together, but they’re worth every effort. We’ve used countless cookie cutters to make these for every kind of holiday. The cookie by itself isn’t what makes it oh-so-yummy… it’s the icing on top that hits it out of the ballpark.
Deliciously pink icing…
- 1 cup butter, softened
- 1 1/2 cups sugar
- 3 eggs
- 1 cup sour cream
- 2 tsp. vanilla
- 3 1/2 cups flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- Icing
- 1/3 cup butter, softened
- 2 cups icing sugar
- 2 tsp. vanilla
- 1/4 tsp. salt
- 2-3 tbsp. milk
- In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs. Add sour cream and vanilla; mix well. In another bowl, whisk flour, baking powder and baking soda; gradually beat into creamed mixture. Divide dough in half. Shape each into a disk; wrap in plastic wrap. Refrigerate 2 hours or until firm enough to roll.
- Preheat oven to 350C. On a well floured surface, roll each portion of dough to 1/4 inch thickness. Cut with a floured cookie cutter. Place 2 inches apart on greased cookie sheet.
- Bake 10-12 minutes or until tops spring back when lightly touched. Removed from pans to wire racks to cool completely.
- For icing, in a bowl, beat butter, icing sugar, vanilla, salt and enough milk to reach desired consistency. Spread over cookies.
Hope you try these soon! Thanks for stopping by!
