Hello Friends!
It feels like it’s been a while since I’ve shared on this little blog of mine… but let me tell ya, I’ve been soaking up every second of our summer holidays! From spending a lovely week at my parents with the kids, to having family stay with us, to camping trips and just the regular summer evenings in the yard, it’s been jam packed full of fun. We’re busy making lots of memories and before we know it, it’ll be time for back to school and the routine-filled days of fall!
Anyway it’s time again for our Monthly Ingredient Challenge! Once a month, some of my blogging friends and I have a challenge where we all start with the same ingredient and go to town with it! Make a dessert, appetizer, main course, soup… anything you want! This month, it was my turn to pick the ingredient and it was the lovely cream cheese I chose!
Who doesn’t love cream cheese? I know we sure do! When I think of cream cheese my mind instantly wanders to cheesecakes. And while my husband makes some of my very favorite cheesecakes, there’s also a few other delicious recipes we make with it. Like our favorite dip. Or stuffed mushrooms. Or one of my very favorite…. Cream Cheese Stuffed French Toast.
Saturdays (in our books) our meant to begin with french toast. Drizzled with maple syrup. One day, we had a container of whipped cream cheese that my auntie gave us so I decided to use it with our french toast. Amazing! And super easy!
- 1 loaf sliced French Bread
- 3 eggs
- 2 cups milk
- 2 tbsp. cinnamon
- 1 tbsp. vanilla
- 1 tub spreadable cream cheese
- Welch's grape jelly (or fresh fruit such as strawberries, blueberries, peaches, etc.)
- Whisk eggs.
- Add cinnamon and vanilla and whisk until blended.
- Add milk and mix well.
- Spread desired amount of cream cheese on bread.
- Top with jelly or fruit and add top layer of bread.
- Dip both sides of sandwhich into egg mixture and fry until golden brown.
- Serve immediately.
The best part of about these “sandwiches” (besides stuffing your bellies with them!) is that you can fill them with any fruit or jellies you love! Here are some we’ve tried…. and loved!
Sliced strawberries make a delicious filling!
And plump, juicy blueberries are paired perfectly with the cream cheese!
